He first opened a restaurant with the emphasis on refined dining. The furnishing of the restaurant and the rooms betray an English influence. Carelshaven had an important function in the region from as early as 1772. It lies on the grand Twickel estate, which covers an area of forty-three square kilometres, and includes 150 farmhouses. The name Carelshaven refers to the harbour on the Twickelervaart, a waterway that once connected the little town of Delden with Amsterdam, via the river Regge and the Zuiderzee. The canal was constructed by Carel George, count of Wassenaer Obdam, who lived in Twickel castle. Its symmetrical shapes, wide veranda and white rendered walls give the hotel a 19th-century appearance. For many years the interior was in classic style, but in recent years, the new owners Alco and Evelyn van Berkel have gradually brought this illustrious hotel into the 21st century. A number of the guestrooms have been modernised, as have the restaurant and bar. The cuisine is contemporary, but the menu also includes classic seasonal dishes.
