Vegetables, herbs, game, and dairy take center stage in dishes that may appear simple at first glance, yet reveal extraordinary finesse upon tasting. Bosmans - with experience at renowned restaurants such as Hertog Jan, Boury, and Nuance - is known for his meticulous attention to detail and his talent for bringing ingredients together in perfect harmony. Signature dishes like the impeccably prepared langoustine - served warm or cold - and the visually stunning banana tart showcase his refinement and creativity. The peaceful terrace overlooks the River Lesse. What a setting! Nature lies at your feet here, and chef Marius Bosmans draws brilliant inspiration from it. Homegrown vegetables and regional products shine in technically precise dishes. The chef enjoys using aromatic accents to support the main ingredient. Lightly warmed garden herbs and a vin jaune jus form the perfect accompaniment to subtle dry-aged North Sea turbot and razor clams. That same jus also elevates an original risotto with pine nuts, broccoli oil, and poached broccoli stem. Chef Bosmans brings flavors to life with a subtle citrus-driven freshness. This Ardennes restaurant, housed in the recently renovated Château de Vignée, is the place for food lovers seeking a top-level culinary experience. Marius Bosmans, Young Chef of the Year for Wallonia in 2024, serves masterfully crafted dishes deeply rooted in the terroir. The mackerel tartare with green apple, kohlrabi leaf, and bergamot oil is wonderfully refreshing. Perfectly cooked sea bass shines in a beurre blanc with fermented asparagus jus, accompanied by pieces of white asparagus, anchovies, and Peruvian aji amarillo - a true showcase of balance, technique, and emotion. Quercy lamb is lightly smoked over hay and served with crisp green asparagus and wild garlic espuma. For dessert, we choose Gariguette strawberries with Faisselle cheese, rhubarb, and meringue. The attentive and efficient service provides a seamlessly orchestrated experience. Each plate is presented with precision and expressive detail, then paired with one of the 16,000 bottles from the château’s impressive wine cellar.
