Chef Pieter Beurskens serves up timeless classics with a modern twist. Highlights of the evening include asparagus risotto finished with taleggio espuma and veal ravioli with summer truffle, followed by a trio of lamb — fillet, cutlet, and croquette — accompanied by spring vegetables and Madeira sauce. For dessert: a strawberry bavarois on a crisp biscuit, topped with fresh strawberries.
