The interior of Hotel PURS, with its 11 guestrooms, is the work of the world-famous Belgian designer Axel Vervoordt. With his minimalist approach, he has created timeless spaces with a deep feeling for history. The 17th-century chancellery was built by the prelate of Cologne. All the classic elements, from the slate roofs to the richly decorated plaster ceilings and grand windows, have not only been preserved, but have also gained new stylistic relevance thanks to Vervoordt’s masterful upgrade. PURS Luxury Boutique Hotel & Restaurant
PURS Luxury Boutique Hotel & Restaurant is the home of the "New Nordic-Japanese Cuisine" crafted by Executive Chef Peter Fridén. Chef Fridén, a South Korean native raised in Sweden. He has recently been awarded a Michelin Star in the latest Michelin Guide for his innovative culinary style. This distinctive fusion of Nordic and Japanese influences will now complement the artistic vision of renowned designer and antique dealer Axel Vervoordt, who has curated the hotel’s design with a deep reverence for the Wabi-Sabi philosophy. Chef Fridén’s culinary approach, characterized by its harmony of simplicity, nature, and sophistication, aligns seamlessly with the unique aesthetic of the PURS establishment, which is part of the prestigious PURS Fine Hotels & Restaurants collection. In addition to his new role at PURS, Chef Fridén will continue his leadership as Executive Chef at Restaurant YOSO. Here, he is currently developing a "Fine Asian Street Food Concept," aiming to bring the vibrant diversity of Asian street food to Andernach. The reopening of YOSO is eagerly anticipated in 2025.

Peter Fridén, known for YOSO, has introduced his "New Nordic Japanese Cuisine" to the 17th-century Alte Kanzlei, with an interior by Axel Vervoordt. Located near the PURS boutique hotel, this chic restaurant features muted decor, eye-catching artwork, and an open kitchen. Fridén, born in South Korea, raised in Sweden, and trained in French culinary arts, offers a six-course tasting menu (including a vegetarian option) that fuses Asian-Japanese, Scandinavian, and French influences. Highlights include dashi chawanmushi with smoked Oscietra caviar and Mangalitza bacon broth. The menu is complemented by a curated wine list, sake, and kombucha.
