CASUAL FINE DINING IN THE CASTLE

1570 - CASUAL FINE DINING

At 1570 - CASUAL FINE DINING, the elegance of the past meets modern, relaxed dining. The restaurant is named after the year Hilmar von Münchhausen laid the castle’s foundation stone, creating a direct connection to the history of Schlosshotel Münchhausen. The historic setting provides the backdrop for a culinary concept that deliberately embraces a fresh, contemporary approach. Under the direction of chef Thor Formell Monforte, the focus is on creative gastronomy, premium ingredients, and refined compositions. The cuisine is rooted in classical French cooking but interpreted in a modern and sometimes daring way. The result is sophisticated without being formal: dishes prepared with precision and depth, served in an atmosphere where guests can relax and simply enjoy themselves. The experience begins at the table. The evening opens with an amuse-bouche, followed by a choice of an elegant four-course menu or à la carte dining. Vegetarian menus are also available. Guests wishing to complete their culinary experience can pair their menu with a carefully selected wine pairing. What makes 1570 special is precisely this combination of exceptional gastronomy and a relaxed atmosphere. Smart casual attire is perfectly appropriate; a jacket or tie is certainly not required. This creates a modern approach to fine dining in which the quality of the cuisine takes center stage, without making the evening feel overly serious or formal. For guests discovering Michelin-star-level gastronomy for the first time, the hotel also offers a special 1570 Experience. This makes the restaurant welcoming to those who are curious about fine dining but prefer a relaxed introduction to the culinary world. 1570 - CASUAL FINE DINING has been awarded 2.5 F’s by Der Feinschmecker, 7 pans by Gusto, and 91/100 points by Falstaff (3/4 spoons).

REGIONAL CASTLE CUISINE IN A RELAXED ATMOSPHERE

SCHLOSSKELLER

At Schlosskeller, regional ingredients, international classics, and contemporary preparations come together in a warm and inviting atmosphere. The cuisine is intentionally approachable: familiar dishes are given a refined touch without losing their recognizable character. A classic such as Wiener Schnitzel becomes a dish that showcases the quality of its ingredients and preparation above all else. Seasonal specialties also bring regular variety to the menu. Head chef Anna Köpke and her team place great emphasis on craftsmanship and flavor. Regional influences form an important foundation, complemented by international accents. The menu features everything from hearty classics to more refined dishes and vegetarian options. Expect dishes featuring locally sourced fish, seasonal vegetables, and carefully prepared meat and seafood classics. The cuisine remains familiar, yet there is always something new to discover. The atmosphere is equally important to the experience. Historic vaulted ceilings and warm interiors give Schlosskeller its distinctive character, while the relaxed ambiance makes it just as suitable for an elaborate dinner as for a spontaneous, leisurely meal. During the summer months, the terrace beside the castle pond provides a particularly beautiful setting, where guests can enjoy the castle’s cuisine surrounded by greenery and water. Schlosskeller delivers exactly what its name promises: an atmospheric dining destination within the castle’s historic walls, where excellent regional cuisine, warm hospitality, and a relaxed atmosphere come together. The restaurant has received 12 points in the Schlemmeratlas and 11.2 points in the Varta.
