Restaurant Ode in Dokkum proudly presents the New Frisian Cuisine, the Frisian interpretation of Dutch Cuisine. Chef Liudger van der Meer creates flavorful dishes with regional ingredients such as red beets, wild garlic, elderberry, eel, and even jellyfish from the Wadden Sea. Geert-Jan Vaartjes: “The techniques Liudger applies make it special. With fermentation, he extends the seasons and nothing is wasted. He shows courage in his combinations, which fits perfectly with Restaurant Ode. We want to surprise and tell a story.” Restaurant Ode is the first 'Frisian restaurant', where Frisian hospitality and craftsmanship are central. Here you can enjoy a top culinary experience with the unique flavors of Fryslân. Van der Meer and his team run the kitchen from the heart of the restaurant, creating a unique connection between guest and chef. Located in the 19th-century exchange building at the market in Dokkum, which has been thoroughly renovated and decorated by interior architect Jeroen Overmars, Restaurant Ode offers a charming and authentic setting. The restaurant is open from Wednesday to Saturday.
