The new chef, Raoul De Koning, spent several years in the Middle East and skillfully blends typical flavors from various Eastern culinary cultures into classic Western preparations. This approach adds a flavorful and captivating twist to his cuisine, giving his sauces an extra delicate to rare touch. The monkfish arrives on the plate, perfectly cooked and delicately dressed with butter. The exquisite curry sauce and garnish of samphire and wakame further enhance the experience of this exceptional fish dish. A clever and surprisingly harmonious dessert featuring white chocolate, green beans, and passion fruit."
