For four generations the hospitality of Nobel has been legendary on the Dutch Wadden island Ameland - and far beyond. The historic hotel is in the heart of quaint histo­rical Ballum. The historical Hanseatic town of Schmallenberg in Sauerland is just a short drive from the ski resort of Winterberg. Hippocampus was built around the 1900s and was for decades occupied by the managers of a local factory. In 1992, the current host and chef, Francis Scheyvaerts, bought the villa – located between Eindhoven and Antwerp – and transformed it into a gorgeous manor. He first opened a restaurant with the emphasis on refined dining. The furnishing of the restaurant and the rooms betray an English influence. This contributes to the friendly atmosphere in the former management villa. The jolly and likeable host also plays a defining role. The rooms, named after desserts, have all the creature comforts of home and are furnished partly with art-deco furniture. It was in the early 20th century that Jonkheer Egbert Lintelo de Geer set about the construction of Kasteel Kerckebosch, a splendid castle in the woodland around the town of Zeist. Antiques and ornaments from restored churches and castles in the area give the interior its dis- tinctive style. There are two antique doors with cast iron knockers from the cathedral in Utrecht, and the fireplace in the salon came from an 18th- century Amsterdam canal house. During the recent refurbishments of the hotel, owners Cynthia Schell and Hans van Triest stylishly complemented the original interior with contemporary elements. The authentic hotel rooms are spread over two sections with a total of 5 different room types.

The smallest castle in the Netherlands, Kasteeltje Hattem, nestles in Roermond city park. Surrounded by trees and greenery, complete with a moat and pond, this authentic castle now is a little paradise for connoisseurs. Chef Maxime Collard, of La Table de Maxime, opened his second hotel in his native village Our, in the Belgian Ardennes. The modern five storey building is constructed against a hillside. Carelshaven had an important function in the region from as early as 1772. It lies on the grand Twickel estate, which covers an area of forty-three square kilometres, and includes 150 farmhouses. The canal was constructed by Carel George, count of Wassenaer Obdam, who lived in Twickel castle.
